Chapter III

Heritage, in hands.

Three rooms of the same house — earth, ocean and oven. None outsourced, none unobserved. This is what we send north under our name, and under yours.

I.

Of the land

We work with growers in the Maule and Ñuble, on plots we have known for a generation. Stone-cleaned, sun-dried, sorted by hand — and only then bagged.

II.

Of the coast

Tuna landed on the Bío-Bío shore reaches the cannery within hours. Solid pack, never flaked. Wild-caught, dolphin-safe, traceable to vessel.

III.

Of the table

Pasta milled within sight of the cordillera, from premium durum. Bronze-die, slow-dried — the bite of a tradition older than the country.
